These Italian dumplings are mainly ravioli without pasta coating. You get the best result by using fresh ricotta cheese, which can be found in Italian markets or specialty stores. Cotton is best to cover the baking paper; you can replace the flour, but be careful not to use too much. For serving, you need 1 kilogram of fresh spinach, 3/4 cup of ricotta cheese, 3/4 cup of finely grated Parmigiano-Reggiano cheese, 1 teaspoon of coarse salt, freshly ground pepper, 2 large egg yolks, 1/2 teaspoon of grated nutmeg, 1/2 cup plus 2 tablespoons of all-purpose flour, 4 tablespoons of unsalted butter, and 8-10 roughly chopped fresh sage leaves. The instructions are to steam the spinach, puree it, mix it with the other ingredients, shape the gnudi, boil them, and serve them with sage butter and Parmigiano-Reggiano cheese.
