This southern favorite tastes deliciously fried. The recipe calls for 2 large egg whites, 1 pound of sliced okra, 1 1/4 cups of yellow cornmeal, 1/4 cup of all-purpose flour, 1/2 teaspoon of cayenne pepper, coarse salt and ground pepper, 1 quart of vegetable oil, and hot sauce for serving (optional). The instructions are to whisk together the egg whites and water in a large shallow bowl, add the okra and toss to coat. In another shallow bowl, combine the cornmeal, flour, cayenne, salt, and pepper. Dip the okra in the cornmeal mixture, shaking off any excess, and fry in 375-degree oil until golden brown. Serve with hot sauce if desired. The cooks note suggests using egg whites instead of whole eggs for a lighter coating and using a cast-iron skillet for best results. Yellow cornmeal can be found in the baking section of most supermarkets. Do not use a mix that contains other ingredients.
