This cheesecake has a velvety texture with less fat than the original, thanks to lighter versions of cream cheese and sour cream, plus lots of cottage cheese. The recipe includes directions for making a graham cracker crust and a cherry topping. The cheesecake is baked for an hour and then left to cool in the oven for an additional hour before being transferred to a wire rack to cool completely. The cherry topping is made by cooking frozen cherries with sugar until thick and syrupy. The cheesecake can be stored in the refrigerator for up to two days.
