This colorful Asian-inspired salad (including cabbage, peas, mint, and coriander) gets its “hot” from ginger and chili and its “sour” from lime and grapefruit. The recipe is from Martha Stewart Living, January 2006. The dressing is made with lime juice, rice wine vinegar, Asian fish sauce, grated fresh ginger, sugar, chopped garlic, coarse salt, and thinly sliced fresh red chili. The salad includes shredded Napa cabbage, thinly sliced sugar snap peas, sliced red bell pepper, segmented pink grapefruit, fresh coriander leaves, fresh mint leaves and small sprigs, and thinly sliced white and pale green parts of scallions. The dressing is added just before serving and the salad is tossed well to combine.
