These thick winter squash slices are browned on the grill and emit a sweet smoky flavor. This recipe from Martha Stewart Living, November 2003 serves 10 people and calls for 4 1/2 to 5 pounds of winter squash, such as pumpkin, kabocha, or calabaza, halved, seeded, and cut into 1-inch wedges. The squash is then drizzled with 1/4 cup of extra-virgin olive oil, seasoned with coarse salt and freshly ground pepper, and roasted in the oven at 350 degrees for 15 minutes. The wedges are then turned over and roasted for an additional 15 to 20 minutes until tender. Finally, the grilled squash is lightly oiled and grilled with the flesh side down for about 5 minutes until browned and cooked through. Serve warm.
