These muffins with a sweet jam surprise inside and a crumbly topping are the perfect breakfast recommendation. The recipe is from Martha Bakes, episode MBLB1001, and makes a dozen muffins. To make the crumb topping, mix flour, brown sugar, salt, and cinnamon in a large bowl. Add melted and cooled unsalted butter and mix with a rubber spatula until large crumbs form. Set aside. To make the muffins, whisk together flour, baking powder, baking soda, and salt in a medium bowl and set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy, 2 to 3 minutes. Add eggs, egg yolks, and vanilla. Add the flour mixture alternately with crème fraiche and mix well. Divide the batter evenly among muffin cups. Add 1 heaping teaspoon of jam to each muffin cup and sprinkle the crumb topping evenly over the muffin cups. Bake in a preheated 325-degree oven until golden brown and a cake tester inserted into the center comes out clean, 20 to 25 minutes. Transfer the muffins to a wire rack to cool.
