This syrup, used in Rhubarb Fizz, is also delicious in lemonade or even Prosecco, folded into whipped cream or over ice. The recipe comes from Martha Stewart Living, May 2013, and takes 30 minutes total, with 15 minutes of preparation time. It yields 2 1/4 cups. To make the syrup, combine sugar, water, vanilla bean and seeds, and chopped rhubarb in a medium saucepan and cook, stirring to dissolve sugar. Simmer until rhubarb is tender, about 3 minutes. Let cool completely. Remove vanilla bean before serving, if desired.
