Source: Martha Stewart Living, May 1996 Ingredients 2 cups cake flour, plus more for pan 1/2 tsp salt 1 tbsp baking powder 1/2 pound (2 sticks) unsalted butter, at room temperature, plus more for pan 1 1/2 cups sugar 5 large eggs 2 tsp pure vanilla extract Instructions 1. Grease and flour a 10 x 5 x 3-inch loaf pan. Line the bottom with parchment paper. When the rack is in the center, preheat the oven to 325 degrees. Place the baking sheet on the rack to heat up. Sift together the flour, salt, and baking powder. 2. In an electric mixer fitted with the paddle attachment, cream the butter on medium speed until light and fluffy, 3 to 4 minutes. Gradually add the sugar; beat until creamy. Beat in the eggs one at a time. Add the vanilla; beat until creamy. 3. With the mixer on low, gradually add the flour mixture. Mix just until blended. 4. Pour the batter into the prepared pan; tap the pan on the counter to level. Place the pan on the baking sheet in the oven. Bake for 1 hour to 1 hour and 15 minutes, until the cake is golden on top and a tester inserted in the center comes out clean. 5. Let the pan cool on the rack for 1 hour. Run a knife around the cake to loosen. Invert the cake onto a rack to remove and then set it upright on the rack. When completely cool, wrap tightly in plastic and let stand for 24 hours. Serve with fresh berries.
