This recipe for passion fruit quark comes from the “Martha Stewart Backhandbuch”. Source: The Martha Stewart Show, February Winter 2007. Makes 1 3/4 cups. Ingredients: 8 large egg yolks, 1/2 cup passion fruit juice, 1 cup sugar, 1/8 teaspoon salt, 1 1/4 sticks (10 tablespoons) unsalted butter, cold, cut into pieces. Directions: 1. Mix egg yolks, passion fruit juice, and sugar in a heavy-bottomed saucepan; whisk to combine. Cook over medium heat, stirring constantly with a wooden spoon (be sure to scrape the sides of the pan), until the mixture is thick enough to coat the back of a spoon, 8 to 10 minutes and registers 160 degrees on an instant-read thermometer. 2. Remove pot from heat. Add salt and butter, piece by piece, and stir until smooth. Pour through a fine sieve into a medium bowl. Cover with plastic wrap and press directly onto the surface of the quark to prevent a skin from forming. Chill until set and firm, at least 1 hour and up to 1 day.
