These classic madeleines are perfect delicate shell-shaped cookies that are flavored with lemon or orange zest, but also chocolate, cocoa, almond paste, or nuts. These cookies are baked in scallop shells and are delicate with a fine-grained interior and a tender crust. Makes 24 large cookies. To make them, you will need unsalted butter, all-purpose flour, whole roasted hazelnuts, powdered sugar, salt, egg whites, and pure vanilla extract. Follow the directions to melt the butter, coat the madeleine pan with butter and flour, process the hazelnuts and sugar, combine the dry ingredients, add the egg whites and vanilla, and mix in the melted butter. Fill the molds with the batter and bake for 14 to 18 minutes. Let cool and dust with powdered sugar. Enjoy these delicious madeleines with a cup of tea or coffee!
