This recipe for pumpkin pecan pie combines the best of both worlds and is the perfect holiday dessert. Martha made this recipe on “Martha Bakes” episode 403. It makes an 11-inch round pie. For the crust, use all-purpose flour and half a recipe of pate brisee for pumpkin pecan pie, along with one lightly beaten egg white. For the filling, mix together 15 ounces of pumpkin puree, 14 ounces of sweetened condensed milk, two large eggs at room temperature, one teaspoon of ground cinnamon, and a pinch of coarse salt. For the topping, mix together 3/4 cup of light brown sugar, three tablespoons of all-purpose flour, one teaspoon of ground cinnamon, a pinch of coarse salt, and four tablespoons of chilled, unsalted butter cut into small cubes. Add 1 1/2 cups of pecan halves and mix to combine. Bake the pie at 375 degrees Fahrenheit for 30 to 35 minutes, then remove the weights and parchment paper and bake for an additional 10 minutes until the crust is lightly browned. Brush the crust with egg white and let it sit for five minutes. Increase the oven temperature to 425 degrees Fahrenheit. Make the filling by whisking together the pumpkin, condensed milk, eggs, cinnamon, and salt. Pour the filling into the cooled crust and bake for 15 minutes. Make the topping by mixing together the brown sugar, flour, cinnamon, salt, and butter until crumbly, then add the pecans and mix to combine. Sprinkle the topping over the filling and bake for 35 to 40 minutes at 350 degrees Fahrenheit until the topping is dark golden brown and the center is slightly bubbly. Let it cool and serve with whipped cream.
