These cupcakes from famous baker Billy Reece of Billys Bakery in New York have a great vanilla flavor thanks to a double dose of vanilla extract in both the cake and the buttercream frosting. The sweetness is just right and they are more than irresistible. This recipe makes about 30 muffins. To make them, mix together cake flour, all-purpose flour, sugar, baking powder, and salt. Add in cubed unsalted butter and mix until covered in flour. In a separate bowl, whisk together eggs, milk, and vanilla extract. Add the wet ingredients to the dry ingredients in three parts, mixing until just combined. Divide the batter evenly among lined cupcake pans and bake at 325 degrees Fahrenheit for 17-20 minutes. Once cooled, frost with vanilla buttercream and decorate with colored sprinkles if desired. Serve at room temperature.
