These chocolate-flavored cookies are enhanced by espresso powder. This recipe makes 48 cookies. To make them, you will need sugar, cornstarch, egg whites, salt, instant espresso powder, unsweetened cocoa powder, and semisweet chocolate chips. Preheat the oven to 300 degrees Fahrenheit and line two baking sheets with parchment paper. In a small bowl, mix together the sugar and cornstarch. In a large bowl, beat the egg whites and salt until foamy. Gradually add the sugar mixture, beating until stiff peaks form. Add the espresso powder and cocoa powder and beat until well combined. Fold in the chocolate chips. Drop the batter by tablespoonfuls onto the prepared baking sheets, spacing them about 1 inch apart. Bake until crisp, about 40 minutes, rotating the sheets halfway through. Let the cookies cool completely before serving.
