This recipe for fried steaks will give you restaurant-quality steak in less than 10 minutes. Pair it with a simple fried sauce and serve it with a classic side like roasted potatoes. From the book “Mad Hungry” by Lucinda Scala Quinn (Artisan Books). Source: Mad Hungry, September 2010. Ingredients: 2 slices of steak (about 1 inch thick), coarse salt, freshly ground black pepper, 1 to 2 tablespoons of non-alcoholic oil. Instructions: 1. Bring the steaks to room temperature. 2. Heat a 10- or 12-inch cast iron skillet over high heat. Leave the steaks on flour with salt and black pepper. Seconds before adding the steak, pour 1/2 teaspoon of oil into the skillet and immediately pour the steak. Repeat with the remaining steak. Cook for 3 minutes without moving the steak (to form the crust). Turn and cook for 2 minutes for rare or 3 to 4 for medium rare. Remove the steaks from the skillet and let them sit on a board or plate for a few minutes before serving.
