These blueberries are also delicious in this compote, which serves as the base for our Ricotta Fritters. Source: Martha Stewart Living, October 1998. Makes 2 cups. Ingredients: 1 pound blueberries, picked over, rinsed, and drained; 1/2 cup sugar; 1 whole cinnamon stick; pinch of salt; 1 teaspoon freshly grated nutmeg; 1 cup freshly squeezed orange juice (about 5 oranges); 1 vanilla bean, split lengthwise; 1/4 cup cornstarch. Instructions: 1. In a large stainless-steel saucepan, combine the berries and sugar. Add the cinnamon stick, salt, nutmeg, and orange juice. Using a paring knife, scrape the seeds from the vanilla bean into the mixture; add the pod. Place the pan over medium-high heat and bring to a boil. 2. Remove the pan from the heat; pour the mixture through a sieve set over a medium bowl. Transfer the solids to another medium bowl; set aside. Return the liquid to the saucepan; bring to a boil. 3. In a small bowl, combine the cornstarch and 1/4 cup water. Add to the boiling liquid. Cook, stirring constantly, until the mixture coats the back of a wooden spoon, about 1 minute. 4. Remove the pan from the heat and pour the mixture over the reserved solids. Discard the cinnamon stick and vanilla bean; serve warm.
