This recipe for an easy-to-use frittata can be served as an appetizer or as a main course for brunch. It is delicious straight out of the oven, at room temperature, or even the next day. This recipe is adapted from “Martha Stewarts Cooking School” cookbook. The ingredients include olive oil, yellow onion, unsalted butter, small fingerling potatoes, coarse salt, freshly ground pepper, basil, parsley, eggs, heavy cream, fresh goat cheese, and Parmigiano-Reggiano or Asiago cheese. The instructions are to sauté the onion and potatoes, add the eggs and cream, top with goat cheese and Parmigiano-Reggiano, and broil until set and golden. Serve hot, warm, or at room temperature. Enjoy!
