This delicious recipe for deep-fried eggplant is from Curtis Stones new cookbook, Cooking with Curtis. It serves 6 and requires 1 eggplant, sliced thinly into 16 rounds, 2 tbsp coarse salt, 1 pound buffalo mozzarella, drained and sliced into 8 pieces, 8 fresh basil leaves, 3/4 cup flour, 2 large eggs lightly beaten, 2 1/2 cups fresh breadcrumbs, 4 cups vegetable oil, and heated tomato sauce. To make the recipe, place the eggplant rounds in a single layer on parchment paper, sprinkle with salt, let sit for 10 minutes, rinse with cold water, and dry with paper towels. Then, place 1 piece of mozzarella and 1 basil leaf on half of the eggplant rounds, sandwich with the remaining eggplant rounds. Heat the oil in a deep pot until it reaches 325 degrees Fahrenheit. Coat each eggplant sandwich in flour, then dip in egg, and finally coat in breadcrumbs. Fry each sandwich in the hot oil until golden brown, about 2-3 minutes. Serve with heated tomato sauce.
